Marco's favourite bake in the range, this ginger sponge has got whole raspberries running through it, with a layer of almonds and cherry pieces on top. It's a perfect blend of strong spice flavour from the ginger, and smooth fruity goodness. I'm serious, this cake is amazing.

This cake has been in the works for ages, and we have finally perfected it! Cake Club's original baker, Will, created this beauty as one of his first bakes, and we've been slowly tweaking it ever since. A sticky ginger individual loaf, topped with lemon zest and a seed crumble. Sticky, delicious, moist, morish - this cake ticks all the boxes. Vegan and NCGI too! Seriously, you just need to try it - it won't disappoint.

If you're wanting something on the counter that will make Father's Day properly special, then we've come up with just the thing for you. Simple and rustic, this Rum & Ginger cake provides exactly what it says on the bottle. Its strong flavour comes from stem ginger chunks baked into the sponge, and Captain Morgans glaze gives every bite fiery punch. Id warn you not to let the kids get at it but there's no real danger - you'll want it all to yourself. This cake is genuinely quite boozy - please eat responsibly and don't operate heavy machinery whilst intoxicated. Coffee machines are ok. On a legal note: this cake contains 0.36% alcohol (ABV). It is therefore (just) under the limit to be considered an alcoholic product, and can be served under the age of 18 and without a licence for the sale of alcohol - despite how boozy it tastes!
